A juicy house-made sausage, deeply buttery mashed potatoes and a jus that brings it all together: the saucisse-purée at Les Arlots has become one of the most recognisable plates in Parisian bistro cooking. It received the Guide Fooding award for best saucisse-purée in 2017.

Natural, biodynamic, sometimes rare and always chosen with conviction: wines are central to the Les Arlots experience. Tristan Renoux builds a selection of more than a hundred references, with particular attention to Beaujolais, the Loire, the Rhône and the Jura.

Since opening Les Arlots around 2016, Thomas Brachet and Tristan Renoux have stood for the same idea of the bistro: precise yet approachable cooking, a lively room, and wines poured for pleasure rather than ceremony.
